CHEZ TAEKO PARIS



We are in the coeur of the third arrondissement in Paris, in the heart of Marais.
Le Marché des Enfants Rouges, built under the rule of Louis XIII around 1615, is the oldest food market in Paris. The name, which literally means the Market of the Red Children, refers to the red uniform worn by the children of the orphanage that was located nearby.

BREAKFAST IN SHUFFLE MODE

Last Sunday I woke up with a sudden urge of bread with butter and sugar. I lightly toasted a slice of potato bread (from Abruzzo) and I spread some organic butter on it. Then I put the final touch to it: a sprinkle of brown sugar.

PIZZARIUM

A temple of pizza close to one of the foremost place of worship in the world. A tiny pizza by the slice shop in Rome, just  a bit off-centre, in an area close to the Basilica of Saint Peter.

A really kind and helpful staff who, always with a genuine smile, advise you and list all the different pizzas of the day and their ingredients.

UNSTRUCTURED DISHES VS WES ANDERSON

Following the hints of Cinegustologia (a new approach that permits to describe flavours and sensations related to food and wine through the language and genres of cinema) I have been seduced by the idea of comparing Wes Anderson movies with some of the dishes, altered in their structure, by two of the most famous Italian multi-star chefs, Massimo Bottura and Davide Scabin.

Their spectacular and playful dishes make me think about Wes Anderson movies like Rushmore (1998), The Royal Tenenbaums (2001), The Life Acquatic with Steve Zissou (2004) and The Darjeeling Limited (2007). Details »

FLAVOUR TREES

I would like to share with you one of the coolest website about flavour pairings. Its name is Foodpairing and you can explore what food products you can combine, clicking on “What fits well with…”, or how you can replace a food product by a combination of other products, clicking on “What can replace…”

You choose a food product from a list on the right and you get a Foodpairing tree.

Each branch is one category like vegetables, meat, herbs and spices, etc. The length of the line of the category is not important. The length in the cluster is on the contrary important. The shorter this line the better the match.

You’ll find out that cucumber can be combined with fried bacon or mackarel, balsamic vinegar with strawberry, fig with Iberian ham, grapes with blue cheese and aubergine with black currant or chocolate.
